Ingredients
- 2 medium potatoes
- 1 green bell pepper (julienned, optional)
- 2 cloves garlic (sliced)
- 1 dried chili pepper (cut into sections, optional)
- 2 tbsp vegetable oil
- 1 tbsp white vinegar
- 1 tsp light soy sauce
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 1 tsp sesame oil (optional)
Steps
- Peel the potatoes and cut them into thin strips. Soak in water for 10 minutes to remove excess starch.
- Heat vegetable oil in a wok or skillet, add sliced garlic and dried chili pepper sections (if using), and stir-fry until fragrant.
- Add the potato strips and green bell pepper (if using), and stir-fry quickly for 2-3 minutes.
- Add white vinegar, light soy sauce, salt, sugar, and white pepper. Stir-fry to mix evenly.
- Taste and adjust the sourness and spiciness according to preference. Drizzle with sesame oil (if using) and serve.
