Ingredients

  • Fresh noodles 200g
  • Minced pork 100g
  • Sesame paste 2 tbsp
  • Chili oil 2 tbsp
  • Soy sauce 1 tbsp
  • Chinese vinegar 1 tsp
  • Sichuan peppercorn powder 1/2 tsp
  • Garlic 2 cloves (minced)
  • Ginger 1 small piece (minced)
  • Scallions 2 stalks (chopped)
  • Peanuts 1 tbsp (crushed)
  • Vegetable oil 2 tbsp
  • Salt to taste

Steps

  1. Prepare the sauce: Mix sesame paste, chili oil, soy sauce, Chinese vinegar, and Sichuan peppercorn powder in a bowl. Add a splash of hot water and stir until smooth.
  2. Heat vegetable oil in a wok over medium heat. Add minced garlic and ginger, stir-fry until fragrant.
  3. Add minced pork and stir-fry until browned and cooked through. Season with a pinch of salt.
  4. Bring a pot of water to boil. Cook fresh noodles according to package instructions until al dente.
  5. Drain noodles and transfer to the bowl with sauce. Toss well to coat evenly.
  6. Top with the cooked minced pork, chopped scallions, and crushed peanuts.
  7. Serve immediately while hot. Mix well before eating.

Tips

For authentic flavor, use homemade chili oil with Sichuan peppercorns. Adjust the amount of chili oil based on your spice tolerance. Fresh noodles work best, but dried noodles can be used as a substitute.
