Ingredients

  • Pork belly 500g
  • Garlic 6 cloves
  • Soy sauce 2 tbsp
  • Chili oil 1 tbsp
  • Sesame oil 1 tsp
  • Sugar 1 tsp
  • Sichuan peppercorn powder 1/2 tsp
  • Green onion 1 stalk
  • Cucumber 1/2 (for garnish)

Steps

  1. Bring a pot of water to boil, add pork belly and cook for 30-40 minutes until tender
  2. Remove pork and let cool, then refrigerate for 1 hour to firm up
  3. Slice the chilled pork into thin, even pieces
  4. Mince garlic and mix with soy sauce, chili oil, sesame oil, sugar, and Sichuan peppercorn powder
  5. Arrange pork slices on a plate with cucumber slices
  6. Pour the garlic sauce over the pork and garnish with chopped green onion

Tips

For best results, choose pork belly with even layers of fat and meat. Chilling the cooked pork makes it easier to slice thinly.
