Ingredients

  • 500g chicken thighs (cut into pieces)
  • 1 cup frozen edamame (thawed)
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp cooking wine
  • 1 tsp sugar
  • 2 cloves garlic (sliced)
  • 1 slice ginger (sliced)
  • 1 tbsp vegetable oil
  • 1/2 cup water

Steps

  1. Cut chicken into pieces and marinate with cooking wine and a little light soy sauce for 10 minutes.
  2. Heat oil in a pan and sauté garlic and ginger until fragrant.
  3. Add chicken pieces and stir-fry until surface changes color.
  4. Pour in light soy sauce, dark soy sauce and sugar, continue stir-frying evenly.
  5. Add edamame and water, cover and simmer on medium-low heat for 15 minutes.
  6. Remove lid and reduce sauce over high heat.

Tips

For richer flavor, you can extend the sauce reduction time slightly.
