
Hot Dry Noodles
A specialty of Wuhan, chewy noodles with rich sesame paste, simple yet delicious

Ingredients
- 200g alkaline noodles
- 2 tbsp sesame paste
- 1 tbsp soy sauce
- 1 tsp vinegar
- 1 tsp chili oil
- 1/2 tsp sugar
- 1/4 tsp salt
- 1 green onion
- 1 tbsp pickled radish cubes
Steps
- Cook the alkaline noodles until done, then drain well.
- In a bowl, mix sesame paste, soy sauce, vinegar, chili oil, sugar, and salt until smooth.
- Place the cooked noodles in the bowl and pour the sauce over them.
- Top with chopped green onions and pickled radish cubes, then mix well before serving.
Tips
Rinse the cooked noodles with cold water for a chewier texture.
