Hot Dry Noodles

A specialty of Wuhan, chewy noodles with rich sesame paste, simple yet delicious

Ingredients

  • 200g alkaline noodles
  • 2 tbsp sesame paste
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • 1 tsp chili oil
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1 green onion
  • 1 tbsp pickled radish cubes

Steps

  1. Cook the alkaline noodles until done, then drain well.
  2. In a bowl, mix sesame paste, soy sauce, vinegar, chili oil, sugar, and salt until smooth.
  3. Place the cooked noodles in the bowl and pour the sauce over them.
  4. Top with chopped green onions and pickled radish cubes, then mix well before serving.

Tips

Rinse the cooked noodles with cold water for a chewier texture.
