Lychee Shrimp Balls

Ingredients

  • 10.5 oz peeled shrimp
  • 10 fresh lychees (or canned)
  • 1 egg white
  • 1 tsp cornstarch
  • 1/4 tsp white pepper
  • 1/2 tsp salt
  • Breadcrumbs as needed
  • Vegetable oil for frying

Steps

  1. Pat dry shrimp and mash into paste with back of knife
  2. Mix with egg white, cornstarch, pepper and salt until sticky
  3. Remove lychee pits while keeping fruit intact
  4. Wrap shrimp paste around lychees to form balls
  5. Coat evenly with breadcrumbs
  6. Fry at 340°F until golden (about 2 minutes)
  7. Drain on paper towels

Tips

For better texture, use chilled shrimp. Maintain oil temperature to avoid burning
